I love chicken in many forms, but few things are more stratifying that a fresh bowl of chicken wings. These are my simple grilled Piri-Piri wings they are different from the kind covered in sauce. These also work great on a BBQ.
- You will need Chicken wings
- Piri-Piri or hot pepper sauce
- A pinch of salt
- Olive oil
Start by preparing you wings. Cut of the wing tips with a sharp knife these can be saved and boiled to make chicken stock alternately I used to cook them for the Dog.
Once you have done this to all the Wings take a sharp knife and cut the joint of the wing. And bend open. This helps the heat get into the wing and helps with even cooking. If you prefer you can cut the wings in half.
Take you wings and arrange them on a cooking tray sprinkle with a little salt and pepper and a few drops of Piri-Piri on each wing.
Grill on one side for 10 minutes then turn over and add a few drops of Piri-Piri. Grill for a further 5 or 10 minutes until cooked. Take a cooking brush and sparingly add olive oil, grill for a further 3 minutes or until crisp.
This Recipe really works great as a snack or served with a salad or cuscus.
