Spinach and Sweet Potato Frittata

Its raining today so I feel I need a hearty breakfast.  This is a fast and tasty recipe that can be done for one person or scaled up to feed many people. It is a very cheap and filling meal.

You will need

  • 1 sweet potato
  • 1 red onion
  • 3 cloves of garlic
  • A handful of washed spinach
  • 8 eggs
  • grated cheese

I will start by preparing the vegetables.


Peal you sweet potato and then slice it very thin. I use a mandolin slicer for this. Remove you onions skin and then slice the onion. Chop your garlic and add it to a pan with the onion and a splash of oil.


Sweat your onions and garlic for a few minutes on a low heat with the lid on until softened.

Now add your disks of sweet potato and continue to sweat until softened this may take a few minutes.


Now take 4 eggs and whisk then in a bowl. Now add your spinach to the vegetables in the pan followed by the egg. Mix the egg through the vegetables until it is evenly covered and cook till firm.


Pre-heat your grill.

Take your grated cheese and sprinkle over the top. Now break your 4 eggs onto the Frittata and grill until golden brown.


Enjoy hot or served cold. It is great with a little splash of balsamic vinegar.
