This is one of the easiest sweets you can make at home. It has a rich and sweet taste which works brilliantly with ice cream or dipped in chocolate.
Warning this does involve very hot sugar which can cause serious burns.
What you will need for a large sheet of the honeycomb toffee.
- 200g white caster sugar
- 5tbs of golden syrup
- tsp of bicarbonate of soda
With sugar it is best to have everything ready in advance of you starting to cook.
Line a toffee tray with grease proof paper or grease the tin with butter.
You will need a large cooking pan as the toffee will froth and you do not want to clean it off the cooker hob.
Measure out your sugar and add it to a large pan. Add in the golden syrup. Heat on a low heat until the sugar forms a syrup. Mix it as it is heating to stop it catching on the bottom of the pan.
once you have a runny syrup turn up the heat and allow to simmer until it takes on a caramel colour. Turn of the heat and add in the bicarbonate of soda and mix it. The toffee will start to froth vigorously make sure you have mixed in all of the Bicarbonate of soda.
Now pour the mixture into the prepared toffee tray while still frothy. Set aside and let cool for at least 30 minutes.
You can break the toffee up and sprinkle it over deserts or dip it in chocolate.
