Sometimes you just want a really fast meal with loads of flavor and very little fuss. I think this is just the recipe. Its really easy and fast to make. It is a hearty meal that will really fill you up. It is inspired by Mexican food but I cant really speak for its authenticity but it is really tasty.
So what you will need
- 1 piece of minute steak
- 1 red pepper
- 1 small red onion
- A bunch of coriander leaves
- 2 cloves of garlic
- 1 tub of Pasata (sieved tomatoes)
- Sour cream
- A cheese of your choice
- Favorite meat rub in my case Mexican fajita
- Wheat tortillas
Start by taking your onion and garlic and dicing them. for this recipe you can be quite rustic. Then cut your pepper into batons.
Take your steak and rub all over with the seasoning mix and a little bit of oil. Alternatively you can use minced meat. I do however find that steak works better and it gives a great texture and can also be served slightly pink.
In a heavy based pan heat a small drizzle of olive oil and gently fry the garlic and the onion. Once the onions have started to soften add your steak and a splash of the tomato. Cook the steak on each side for 1 minute if you want it pink 2-4 minutes a side for well done. Remove from the heat and allow to rest.
Take you tortillas and warm them in a dry pan or in the oven. They should start to become soft and fluffy. I like mine a little bit charged so will leave them in the pan a bit longer.
Take your minute steak and roll it. then with a sharp knife cut it into strips. I like to add some coriander at this time and cut it in with meat.
Take your Tortilla and lay on some of the garlic and onion, then add the steak. Grate on some cheese and layer with a heavy dollop of sour cream. I also like to add a little bit of the fresh tomato Pasata and the raw pepper.
It really is that simple but it is bursting with flavors from the cooked meat and onion to the fresh tomato and pepper. I also really like the contrast of textures from the different ingredients.
The final step is to roll up and enjoy.
