I have recently been having a bit of a craving for something sweet. I love to make my own sweets as I find it really fun so here is my recipe for white chocolate coconut truffles.
What you will need.
- 250 grams of white chocolate
- 50 grams of double cream (this recipe is done by weight)
- A few ice cream wafers probably about 5
- 50 grams of unsweetened coconut
To start we are going to make a really simple chocolate ganache. Working with a simple 3:2 ratio of chocolate to cream.
Break up 150g of white chocolate and add it to a bowl. I use digital weighing scales to make sure the weights are as close as I can get them.
Now using weighing scales add 50g of heavy or double cream. You can see I went a little bit over but a gram should not make too much difference.
Now we are going to microwave the chocolate and milk for 30 seconds. When the time is up take out the mixture and give a quick stir.
Microwave for a further 30 seconds or until the chocolate and cream becomes smooth.
If you are making plain chocolate truffles you could leave it at this point. But I want to make coconut ones.
Take about 50g of desiccated coconut and mix it in well with the ganache.
I use unsweetened coconut as I find white chocolate is already very sweet. Cover the ganache and let cool in a fridge for at least and hour.
Break up your wafers and put on a clean board or counter.
Take a half tea-spoon of the now set ganache and roll it in the broken wafer pieces. This is going to give your chocolates a lovely crunchy texture to counter the smooth sweet texture of the ganache.
repeat this step for the rest of your mixture.
now take another 100g of white chocolate and melt it either in a double boiler or microwave.
For the best result temper your chocolate to give it a shine and crisp texture. you can find instructions on how to do this here.
Now drizzle the chocolate over the truffles. I tend to do this on waxed or baking parchment as it make the clean up much easier.
Set aside and let them cool and harden. once they have hardened they are ready to enjoy.
