My Lemon Biscuits

There is something very special about being able to take a minute to yourself. I am British so this often involves tea. This is a recipe for a nice simple lemon biscuit which is a perfect accompaniment to black tea.

So what you will need.

  • 125g unsalted butter at room temperature
  • 1 medium egg
  • 100g of caster sugar
  • 1/4 tsp of baking powder
  • A pinch of salt
  • 2 tsp lemon flavoring

Start by creaming together the butter and the sugar. Once fully combined  beat in the egg until becomes light and fluffy. You will see the colour become lighter. Using an electric whisk will really help with this.

Add the flour and the other ingredients and mix until fully combined when it easily forms into a ball without being to sticky it is done.

Place in the fridge to cool for about an hour.

Pre-heat your oven to 180°C/350°F

Now roll out your dough to about 2cm thick then using a cookie cutter cut out your biscuits.

Place the biscuits on a greased tray and bake for 10 to 15 minutes or until golden brown.
