My my seriously creamy potato gratin

This recipe is for a really creamy and decadent side dish which can be put with a whole range of foods.

It has a smooth creamy texture but with a crunchy rich coating. The potatoes are soft and silky with a complex but subtle flavor of the onion and garlic. It’s also surprisingly easy to make for something that look pretty fancy and is a great alternative to bakes potatoes or fries.

What you will need

  • 2 medium maris piper potatoes
  • 1/2 medium white onion
  • 150 ml double cream
  • some black pepper corns
  • 2 cloves are garlic

Start by peeling your potatoes. Then using a mandolin slicer or food processor cut you potatoes finely into circles.

If you don’t have a mandolin or food processor you can use a knife just take extra care to slice the potato as equally as you can.

Now slice you onion in the same way. I recommend That you then slice your garlic by hand into thin strips. Garlic is really to small to go safely through a mandolin without taking off part of your finger.

This is where I cheat a bit. To speed up the cooking place the potatoes on a microwave safe plate. Then put the potatoes in the microwave on a high heat for 1 or 2 minute. Let them cool before continuing. This will help to ensure that the potatoes are cooked all the way through even if you layer them very thickly.

The potatoes can be cooked in a number of different dishes. I like to make individual portions so I am going to use some mini casserole dishes, but you could also use a ramekins.

Take your potato  a little onion and garlic and start to layer it in the bottom of your dish. Dust with a little fresh pepper.

Now you want to pour a little bit of the cream over the other ingredients so that the potatoes are equally coated.

Now repeat the steps of layering and adding cream. You want to stop with a few centimeter to spare. This is important as you don’t want the cream to bubble over in the oven.

Now that they are full take some of your favorite cheese and give it a liberal coating.

Take this time yo pre-heat your oven 200 °C / 400 °F .

Bake in the middle of the oven for 15/20 minutes. They should be piping hot with a golden crust.

Let them cool a little bit and then they are ready to serve with your favorite meat of fish dishes. They are even good on their own.
