This is one of my favorite comfort foods. It is a great mix of flavors and is a very flexible dish. You can make it with left overs or anything you find in the fridge. It is also a very quick recipe if you already have some chicken or pork in the fridge.
So what you will need.
- 1 bunch of Chinese or Japanese noodles
- baby corn
- bean sprouts
- 1 spring onion
- half a cucumber
For the broth
You will need about
- 3 1/2 cups of chicken stock (fresh is best but stock cubes also work)
- 3 tbps of light soy sauce
- 1/2 tsp of thai fish sauce
- 2 chili’s diced
- 3 cloves of garlic diced
- a bunch of coriander leaf
- 1/2 tsp of brown sugar
Add the stock and other broth ingredients to a large pan and bring so a gentle boil.
In a second pan cook your noodles according to the instructions. When they are cooked drain and add them to the bowl. Then take your other ingredients and layer them into the bowl. This is where you can get creative. You could add in left over chicken, prawns or in my case red pork. Get the recipe here.
Once you have layered the ingredients pour over the hot broth and leave to stand for a minute. Then enjoy.
