Strawberry Cream Cheese Danish

This is my recipe for a simple yet delicious fresh Danish. I had the idea to make these when I had a bit of left over puff pastry and some otherleft overs in the fridge.

They are cruntchy and sweet and make an excelent treat or breakfast with coffee.Even better they only take a few minutes to make and cook.

 

To start you are going to need some pre-made puff pastry. I say use pre-made as its is very time-consuming and difficult to make your own.

Start by rolling out your pastry. You will want it thin for this 1 cm in thickness.

Now you want to get a cookie cutter and cut out your shapes, these can be whatever you like or you can cut squares with a knife.

I am going to use a second smaller cutter to make an impression on the inside. This one you want to press more softly so you don’t go all the way through the pastry. this is going to give you a border and allow the pastry to rise fully on uncovered areas.

Prick the base of the pastry in the areas that will be covered this will stop it going soggy or puffing up.

Now we are going to make the cream cheese base.

You will need

  • 250g of cream cheese
  • 1/4 cup of Icing sugar
  • 1 tsp of lemon essence

Add the ingredients to the bowl But keep some of the sugar back. It helps to add this gradually so you can adjust the flavor to your liking.

Now whip together the ingredients you can use a machine of a hand whisk.

Now take the mixture and either spread it onto the pastry or pipe it if you can.

Now cut some strawberries into thin slices and start to layer them on top of the cream cheese.

Now use a little bit of egg wash on the edges that are not covered. This will help them to crisp up and shine.

Now add the Danishes to a pre-heated oven at 180°C / 350°F for 12 minutes.  Take them out of the oven and leave to cool. then finish with the dusting with Icing sugar and some fresh fruit.
